One thing THE Coronus has done is that it has made us way more creative in the food department. Deb does most of the cooking around here because number 1, I take care of all the behind the scenes with our business… this site, the posts, negotiating with companies, planning the calendar, etc. Number 2 … she is better at it. 😆 She seasons everything SO WELL. I am very light-handed when it comes to seasoning and she is heavy-handed… and then she adds more. 😆
Anyway… QVC recently sent us a Traeger grill for Deb to try. I wish I would have taken a photo of her face when it arrived shortly after we self quarantined the first part of March. 😬 She immediately put it together and started using it perfecting her methods.
For those who don’t know about the Traeger grill, you cook with wood pellets. The pellets come in different flavors, mesquite, cherry, maple, hickory, etc, which give your food that yummy smoked flavor. We are currently using the Champion blend, which is a few different flavors together. You can set the Traeger at a certain temp and it stays at that temp the entire time.. unlike any gas grill.
Smoked Pot Roast Stew on the Traeger
This smoked pot roast stew recipe is the first recipe that she made on the Traeger. It is so DELICIOUS that she has made it a few times since. It was easily the best meal she has ever made. And she’s made A LOT of great meals. This roast is smoked for a short time and then cooked with the vegetables. Deb combined a few recipes together to make this one and has tweaked it to our tastes.
Ingredients:
Preheat the Traeger at 180 degrees for 15 minutes.
1 tsp garlic powder
1 tsp onion powder
1 tsp kosher salt
1 tsp black pepper
1 (3lb) chuck roast
Combine all of the dry ingredients and rub the chuck roast with the mixture.
Smoke the chuck roast for 1 1/2 hours. Remove from the grill and increase the temperature to 275 degrees.
Transfer the chuck roast into a large pan. (We use our Le Creuset pot.)
Add:
2 cups potatoes
2 cups carrots
2 cups of chopped onions
1 tsp chili powder
1 tsp red chili flakes (you can adjust this depending on your heat level)
1 cup of red wine
1 teaspoon of rosemary
1 tablespoon thyme
2 cups of beef stock
Place the lid on top and braise in the Traeger on 275 degrees for 4-5 hours until the roast is tender.
It is SOOOOO GOOOOOOOD….
I can’t even begin to explain it. My mouth is watering thinking about it. 😂 I explained how it tasted in my best Guy Fieri voice, but I will spare you.

Love our Traeger, we have a small one and use the mixed blend pellets exclusively. One can get the pellets at Costco too. Salmon is great on there. Threw corn on the cob on it while we were cooking something else and it was amazing!
I have learned you need to clean out the pellet ashes after every few times you use it.
Question: does the smoke cont to flavor the chuck roast after you put the pot lid on or can that part of the cooking be done in the oven?
