What else do you do when you are in self-quarantine but eat? You guys…we have literally plowed through all of the easy snacks by day three. HELP! 😂 Granted, we didn’t buy TONS of them because we knew how this would be. We didn’t buy ice-cream or candy because we can’t think of anything else but eating that stuff when we have it. Deb proceeded to eat an entire carton of granola and dried fruit in one sitting. 🤦🏻♀️ But what comes after all of the snackity snacks are gone? Good old midwest comfort food.
It smelled like Thanksgiving in our house a few days back. 😂 If I come out of the self-quarantine the same weight, it will be a miracle. I told Deb we needed to start doing some type of exercise. It’s been so rainy and nasty here that we can’t even walk. We did visit our storage unit the other day just to say HI to everything.. and tell all of our treasures what’s going on…. not really. Actually, we went to grab a leaded glass window to hang in the dining room. We sold a piece of furniture and wanted to spruce that area up. I told the girl to throw the NON-CORONA filled money in the mailbox. THE CORNONA virus is too terrifying to grasp that I cannot even begin to think about it.
Therefore we eat!
Deb’s Famous Mashed Potatoes
First off… Deb makes THE BEST mashed potatoes. They are creamy and tasty because she adds all the good fattening stuff. We usually only make these for special occasions and family gatherings…. AND quarantines. 😂 She used our KitchenAid stand mixer for this mashed potato recipe which happens to be on SALE currently at QVC. It is $299. KitchenAid Stand Mixer / Bowls-4pc set / Wooden Utensils / Knife Set / Cutting Board

Ingredients:
This amount is enough for 4 people
Three pounds of potatoes
1/2 stick of melted butter
1/2 cup of milk
1/2 cup of sour cream
Lots of Salt and Lots of Pepper
Optional:
1/2 Cup Finely Shredded Cheddar Cheese
Garlic Salt
Instructions:
Peel and Boil Potatoes and drain (See tips below)
Mash with potato masher and add to your KitchenAid Stand Mixer bowl
Add the rest ingredients and mix until you can’t mix no more. 😆
Deb’s mashed potatoes are so delicious. You may have to add more salt and pepper according to your taste. They are requested a lot when we go to gatherings, etc.
Tip for making the best mashed potatoes…
- Always start out with cold water to boil the potatoes
- Do not over cook the potatoes as it makes them too “starchy”
Have you ever tried sour cream and cheese in your mashed potatoes? Honestly, plain ones are a little boring after having them like this. And, no. These aren’t healthy at all, but when you are in self-quarantine, sometimes you need a little comfort. Let’s hope this “comfort” food doesn’t add on too many extra pounds. ☹️

Here in Minnesota I out Top the Tater in our mashed potatoes. They are a huge hit at Thanksgiving.

I add roasted garlic to my mashed potatoes.

My Big Sister Donna taught me how to make MASHED POTATOES. I add a little Chicken Salt (chicken bullion granules) to my water before adding potatoes. Gives the taters more flavor and you don’t add salt. Mix them the same, and add more Real Butter on top with course pepper and Sea Salt. Delicious
