I recently asked for your favorite high protein lower carb recipes over on Instagram. And I am still going through them all. Once I taste test them, I will share them over here on the blog. This one I’m sharing is a tried and true go-to recipe that we’ve made on the regular over the last year.
I briefly mentioned that I started adding meat back into my diet once we started at the gym. There was just no way I could get ample protein doing such hard workouts. It really has done wonders for my hunger level. I stay fuller longer. I used to think that was all a bunch of horse shit, but it really isn’t. 😜 This Buffalo Chicken Burrito can be made vegetarian by using roasted cauliflower rather than chicken. We actually both like it better made with cauliflower. But the chicken makes it obviously higher in protein.
Buffalo Chicken Burritos
This recipe is for two. So naturally, if you want leftovers or more than one burrito each, you will want to double the recipe. One is plenty filling for us.
Ingredients:
2 low carb burrito shells or flour tortillas
Buffalo sauce to coat chicken
4 ounce chicken breast
2 cups chopped romaine Lettuce
1 medium avocado
1 chopped green onion
2 ounces of cheddar cheese
Ranch dressing to taste (optional)
You can either cook the chicken breast in the crock pot or a skillet. I’ve done both. I shred it when it’s completely cooked and add buffalo sauce to taste and warm it back up after adding sauce. (For the vegetarian version, chop cauliflower in small bite size pieces. Toss with buffalo sauce and roast on 350 degrees for 10 minutes.)
Warm up the burrito shells. I usually lay them on top of the chicken for two minutes. Remove shell and add the chicken, romaine, avocado, green onions, and cheddar cheese. You can drizzle a little ranch dressing on top, if you want. It actually cools down the heat from the buffalo sauce.
Oh…and you can make this as healthy or as trashy as you want. 😉 We prefer the healthier brands of buffalo sauce and ranch dressing. There are some sauces that are filled with nothing but chemicals, which is very scary, but let’s not get started on that.
This is a recipe that is just so easy and takes about 15 minutes. And, even shorter if you use leftover chicken or cook it in the crockpot. You can also make it more filling by adding rice.

I cant wait to try this. I too am a vegetarian but very very slowly just adding fish and chicken to my diet for the protein. I have found a pancake mix that has 14g of protein at Trader Joe’s.
